Open a pizza delivery business. Business plan for profitable pizza delivery. Costs and profitability

The first step is choosing a concept. You can offer customers pizza made from prepared ingredients and frozen semi-finished toppings. This is a common option. The target audience is people who do not have the time or opportunity to cook on their own and do not have particularly high demands on the recipe. But you can also choose a different concept. Its essence is the independent preparation of dough, fillings and sauces. This is a more labor-intensive option that requires significant investment and qualified chefs.

Most beginners start with the concept of making pizza from scratch. Having tested the idea, gained experience and achieved certain financial results, you can think about increasing the rating and creating a pizzeria with original recipes. The advantage is a lower initial investment. If you decide to work according to the second concept, but do not have the necessary knowledge and experience, you should think about a franchise. There are plenty of attractive offers from pizzeria chains on the market.

Main risks

In a big city, the sale of pizza with home delivery is in great demand, but the competition will be very serious. In a small locality, costs are lower, there are fewer competitors, but demand is much lower. The most common mistake newbies make is incorrectly assessing the needs of the target audience. Try to be realistic about what types of pizza will be in high demand and choose your niche.

In the summer, interest in pizza decreases somewhat. Experienced entrepreneurs advise starting trading in the fall. Before the hot season arrives, you will gain experience and be able to diversify your assortment with salads and soft drinks.

No matter how difficult it is to break into the market, the quality of pizza should never be reduced. Most failures are due to the fact that after a good start, newcomers weaken control over compliance with the technological map and try to increase profitability by purchasing cheaper ingredients. The result is loss of reputation and fading business.

Location

By providing pizza delivery services, you get the opportunity to save on renting premises. It is important to find a location equidistant from the areas where the majority of your potential customers live or work. In a big city, it makes a lot of sense to focus on a few blocks. If you plan to provide pizza delivery throughout the city, it makes sense to locate closer to the center. Carefully consider fuel costs during the delivery process. It might be more profitable to open another location.

Don’t forget about customers who want to purchase pizza without delivery. Therefore, look for available space near college campuses and higher education institutions. A busy street in a residential area, a place near a public transport stop, entertainment centers, cinemas, is suitable.

Equipment

To store fillings, sauces, preparations and other ingredients, you need to purchase a freezer. You can choose a model with medium capacity, the average cost is about 60,000 rubles.

A professional pizza oven is not cheap, but you shouldn’t skimp on it. If you have limited funds, it is better to buy a reliable domestic model, the approximate price is 20,000 rubles. European manufacturers offer stoves for 35,000-50,000 rubles. For this money you will get high quality and impressive durability, additional functions and several baking modes. When choosing a model and manufacturer, you should give preference to offers with after-sales service.

For the option of preparing the ingredients and dough yourself, you need a machine for rolling out the dough, the average cost is 45,000 rubles. You also need to buy a professional spicer for even cutting of the filler ingredients, the price is 35,000 rubles.

Buying a sink, a table for making pizza, kitchen utensils and other furniture will cost another 20,000-25,000 rubles.

You will also need pizza boxes. It is better to immediately develop a unique logo, register a trademark and order branded packaging.

If you plan to offer pizza delivery, you need transportation. During the warm season, couriers can deliver orders on bicycles or scooters. In winter it is necessary to use a car. If the starting capital does not allow you to buy vehicles, you can initially enter into an agreement with a courier service. Another option is to invite people with their own vehicles to serve as couriers and reimburse the costs of its maintenance.

Raw materials

Having chosen to make pizza from semi-finished products, you just need to find reliable suppliers of blanks of different sizes and toppings. It is important to provide customers with a decent choice.

By purchasing a franchise of a pizzeria chain, you will have at your disposal original recipes and contracts with reliable suppliers of ingredients. If you are planning independent development, you will have to look for high-quality and inexpensive raw materials on your own. Flour, vegetables, mushrooms and some types of sausage can be purchased from domestic producers. It is better to purchase seasonings and cheese, certain types of sausage from suppliers of foreign brands.

Personnel

The staff of a pizzeria offering delivery service can consist of 6 people:

  1. 2 dispatchers. They take orders and communicate with the chefs.
  2. 2-3 pizza makers for shift work.
  3. 3-4 couriers. They must have excellent knowledge of the city and ensure timely delivery of orders.

It is advisable to have an experienced manager manage the process and coordinate the work of employees. But in the process of creating a business, these responsibilities can be taken on by the owner. All employees must have health certificates.

Documents and licenses

You can register your business as an individual entrepreneur or LLC. The choice depends on the number of founders and further plans for development. If you are determined to create a chain of pizzerias, it is better to immediately register a legal entity. The choice of taxation system also depends on the characteristics of your business - compare the prospects and choose the most profitable one.

The preparation and sale of pizza is not subject to licensing, but it is necessary to go through the certification process for all items in the assortment. You must draw up a technological map for the preparation of each type of pizza, provide the commission with certificates for raw materials and equipment.

It is also necessary to obtain permits from fire supervision and SES. Since you work in the catering industry, the requirements of regulatory services will be quite high.

Registration and paperwork costs 30,000-60,000 rubles, depending on the complexity of the process.

Profitability

The average bill for pizza delivery is about 500 rubles. Profitability depends on many factors, and it can only be calculated in each specific case if accurate initial data is available. A profit margin of 60% is considered normal for this business. The cost of making pizza is low even when using the highest quality raw materials. Profitability directly depends on the number of orders.

Marketing

An advertising campaign should be launched even before the opening of the pizzeria. Advertising in the media is not cheap, but try to use this method if possible. Advertisements work great in the area you choose to work. A website with the ability to order pizza delivery online is a necessity for modern business.

It is worth adjusting the delivery cost depending on the distance. Free delivery may be offered within your area. This will not particularly affect the cost, but will increase sales. In the end result you will be a winner. Expand your assortment with salads, drinks and price offers for customers with different income levels. You should have a budget menu, it will interest students.

Ideally, a pizzeria should be open 24 hours a day, seven days a week. But it is advisable to introduce overnight delivery after some time, when you already have a solid customer base. It makes sense to establish cooperation with agencies organizing holidays. Offer them a percentage of their order for recommending your pizza. It is worth printing out booklets and offering them in office buildings and business centers.

Summary

Organizing a pizza preparation and delivery business is not easy. But the efforts will definitely pay off with high profits.

Organizing a pizza delivery business is simple and difficult at the same time. Simple - because you won’t need such large investments as for more serious enterprises. Difficult - because you have to go through the authorities, work hard to earn a name and be patient until the business pays off.

If you succeed, you will get a highly profitable business, you will be able to open new outlets or even full-fledged restaurants. It all depends on your patience, desire and determination.

Features and difficulties of such a business

Let’s start the topic: “How to start home delivery of pizza”, with the features of the business and the difficulties that arise from them. The first and most obvious - competitors. They are all establishments where pizza is prepared and delivered: specialized pizzerias, restaurants and simply delivery companies. You've probably seen how all the entrances are plastered with advertisements with the menus of such companies. As a rule, the number of competitors in one area is not very large, which makes the task easier. But their main advantages are speed of delivery, well-known name and reputation.

Customers are reluctant to change their habits and prefer to order in one place – where pizza is prepared deliciously and delivered quickly. You'll have to work hard to convince them to buy something from you. To do this, you need to advertise more, literally be an eyesore, so that the client decides to order something from you.

Next you need to earn reputation. Your pizza should arrive to the client as quickly as possible, always be tasty and of high quality. If you cook poorly or are slow with delivery, people will not order from you again and will dissuade their friends from doing so. Therefore, carefully monitor the quality of ingredients and pizza preparation technology; saving on this is a bad option.

The following is organizational difficulties. First you need to find a room. Please note that it is unlikely that such a business can be organized in your own apartment. But even in this case, you will have to go through many authorities, at a minimum, this is obtaining a trade patent, permission from the fire inspectorate and SES. Experienced entrepreneurs recommend going to these organizations with a project for the premises before signing a lease agreement. You can immediately eliminate shortcomings so that you don’t have to redo anything later.

Then - the staff, namely - cooks It is unlikely that you will be able to find someone who will prepare it using all Italian technologies for pizza delivery. This is taught in specialized institutions or directly in restaurants. One consolation is that many people note that pizza in Russia tastes better than in Italy. But in any case, you need to find a smart person who will make sure that the pizza is tasty and its taste remains unchanged over time.

This is not easy, because it is not always possible to purchase raw materials from one supplier. And it is the cook who will determine whether he can recreate the same taste using different flour, cheese, tomato paste, etc. And also the tendency of the chef profession is to change jobs every 2-3 years, as they get bored with the previous one.

Menu. Need to add at least drinks and salads to it. If you look at the menu of other similar establishments, you will see that they are not limited to pizza. The most popular is the combination of pizza and sushi.

Fast delivery. Take care of logistics issues by purchasing several inexpensive cars or inviting drivers to work in your own cars. If you work in a residential area, suburb or small town, the bulk of the delivery will be carried out by car or moped. In the center of a metropolis, it is better to deliver pizza by public transport due to traffic jams.

For information about how much time delivery should take place, see the expert’s commentary.

Premises and equipment

Enough 30 sq.m., on which you can place all the equipment. Cosmetic repairs may be required. The premises must comply with fire safety and SES standards, which you will first visit before the start of the rental period, and then you will see representatives of these organizations again after everything is equipped.

Since you only need a bakery, a small production workshop is sufficient. Premises for it can be rented in canteens, cafes, residential buildings, or a separate tent for selling pizza can be set up - wherever it is possible to install equipment and start cooking. It is important that courier vehicles can easily drive up to your workshop and take away the goods from there.

We are talking about a pizza delivery business only; we are not yet discussing the possibility of organizing a full-fledged pizzeria. But it is quite possible to open it when you settle in the market and receive a stable income. But as an option, you can put several tables indoors, if the space allows, or provide the opportunity to take freshly baked pizza to take away.

  1. Pizza oven is hearth or conveyor. Hearth oven cheaper, the pizza is placed on a stone floor and baked at a temperature of 400-500 degrees Celsius. Conveyor models are more expensive, but they are better suited for preparing the same type of product. Both types of ovens are gas and electric. There are also wood-burning ovens - a classic option for an Italian pizzeria. But pizza delivery companies are recommended to use conveyor models - they are more productive and easier to operate.
  2. Pizza table. This is where the pizza will be assembled and prepared to go into the oven. The table should have gastronorm containers with a cooling effect for storing ingredients.
  3. Refrigerator and freezer. This is where the rest of the ingredients will be stored.
  4. Ventilation equipment.
  5. Dough sheeter machine.
  6. Pizza molds.
  7. Kitchen tools.
  8. Gravy boats.
  9. Package.
  10. Pizza bags.

Personnel and procurement of raw materials

What kind of personnel is needed:

  1. Cooks. Optimally – 2 pizza chefs who can work together or in shifts.
  2. Purchaser of equipment and raw materials. You can act as it yourself.
  3. Couriers – from 4 people.
  4. Call center operator. You can also do this yourself at the first stage.

You can do activities from 2, 3, 4, and sometimes 1 point yourself. A mistake many novice businessmen make is trying to do everything yourself. Calculate exactly what work and in what time frame you can complete it yourself, what you can entrust to your employees and who exactly, otherwise you may not get anything done. The best option is to purchase raw materials yourself and answer some of the calls, and delegate the remaining responsibilities to employees.

First, let's talk about what raw materials you will need. Ideally, pizza should be made from hot dough and quality ingredients. But there is an opportunity to save money by purchasing several pizza blanks and several options for toppings sold at wholesale stores.

The pizza will be prepared very quickly, the cost will be minimal, but the quality may suffer. Therefore, if you go this route, first personally try each prepared pizza and decide whether you would buy such a product again.

If you decide to buy ingredients separately, they are sold in wholesale stores such as METRO or at specialized bases that supply raw materials for pizzerias. You can find a permanent supplier in Russia or abroad and buy all the ingredients from him. We can definitely say that raw materials are not something you can save on.

Economic calculations

Minimum costs:

  1. Rent of premises – from 15 thousand rubles per month.
  2. Equipment – 170-200 thousand rubles.
  3. Raw materials – 100-200 thousand rubles.
  4. Repair (if necessary) – 50-100 thousand rubles.
  5. Salary to employees is 150-200 thousand rubles per month.
  6. Registration of an enterprise – from 15 thousand rubles.
  7. Advertising – from 30 thousand rubles.
  8. Pizza packaging – from 10 rubles. per box.
  9. Printing booklets with menus – 5-10 thousand rubles.
  10. Utilities – 20-30 thousand rubles.

This is an approximate minimum cost. It may be more or less and varies depending on the region.

The average profitability of such an enterprise is 35-40%. The payback period is from 20 to 30 months. The cost of 1 pizza is 50-120 rubles. Markup – 200-300%. The average price of pizza is 250 rubles. The average number of items is 20 types of pizza on the menu. About 50 orders can be delivered per day. Let’s say 1 order is, on average, 2 pizzas. We think so because 1 person can order 1 pizza, but at the same time a large company will order 3 pizzas. So you get 2 pizzas per order. Please note that these are very approximate calculations.

As a result, the average cost of pizza is 85 rubles. Let's say you sell 100 pizzas per day. We calculate gross income per month:

(250 x100 – 85 x100) x 30 = 495,000.

After deducting expenses and taxes, the net profit will be 70-100 thousand rubles per month. This is a rough and very approximate calculation - income may be more or less. You will certainly have other types of food and drinks that will increase your profits. The optimal ratio between product cost and price: 1:5. some companies use a ratio of 1:7.

Don’t try to set a price higher than your competitors, otherwise you risk being left with nothing. Focus on the average market price; you shouldn’t sell pizza that is too cheap either - it raises suspicion. In addition, you will have to save on raw materials, but this is not worth doing, as mentioned above.

Advertising

Come up with a catchy name, a bright logo and patent them. The client should see them as often as possible: on leaflets, on cars, on the Internet, on billboards, in print publications, etc.

Create your website. Place on it all the information about the product, its ingredients, some interesting articles, the history of your company and everything that may be of interest to the client. Don’t forget the most important thing – the “order” button. The client should be able to instantly buy pizza directly on the website, order a call back, or call the specified phone number himself.

Develop mobile app. Its purpose is to quickly purchase pizza and notify you about news and special offers from your company.

Post up menu brochures in the entrances. They will be constantly torn down, but someone will definitely want to order pizza, since there is no need to look for delivery companies on the Internet - the menu has already been delivered directly to his apartment.

Develop a discount system. For example, let subscribers of a group on a social network receive a 5% discount, or a 10% discount for repeat orders within 2 weeks, etc.

Run word of mouth. Many companies rate it as the best way to advertise. Let someone you know, in a conversation with their friends, tell you what delicious pizza they tried and order it, so that people can be convinced of it. Your task is to prepare truly delicious pizza and maintain your brand, otherwise you will instantly lose confidence.

The pizza delivery business is quite simple to organize. It has its own characteristics and difficulties. In short, to overcome them you need patience and ingenuity. Then you will receive a profitable and highly profitable enterprise with unlimited possibilities for expansion, growth and opening new branches.

Many pizza delivery companies started out as small bakeries, from where the owner delivered the pizza himself. And now these are large enterprises, known throughout the country or even abroad.

Fixed costs

The positive aspect of fixed costs is that if you produce more product, you do not incur any additional costs.

Product cost

Fixed costs will be spread over more units of production, which will ultimately lead to lower costs (cost) per unit. This phenomenon is called economies of scale.

MARGINAL INCOME

Hi all! Friends, I hope everyone already knows about our approach to running a pizza business. We offer a product made only from real and fresh ingredients. And we never use imitations or fakes. Let's sort out our pizza Margarita: products, cost and markup

Dough. We use three types of Italian flour.

Rating of top blogs on the Runet

We will not reveal the secret of the recipe. The cost of dough per serving of pizza is ~20 rubles

Sauce. Tomatoes in our country are a very seasonal matter. They are only there three months a year. Making the sauce yourself is certainly cool, but if pizza costs 1.5 times more for 8 months a year, no one will buy it. This is only possible in Moscow, where the average bill is much higher. Therefore, we do not deceive anyone and use natural Mutti sauce, which we modify a little. Cost price 18 rub.

Cheese. Mozzarella is a cheese made from about 80% natural milk. Everyone knows how much milk costs. In addition, cheese producers spend money on production, salaries, equipment maintenance, logistics, etc. We know representatives of Mozzarella cheese cannot cost 250 rubles. Or rather, it can, but pay attention to what is written on the packaging (a cheese product that consists only of imitation and substitutes). We use Bonfesto cheese, which consists only of natural ingredients and is produced in Belarus. Price per kg ~ 400 rubles, per serving of pizza we have 120 g = 48 rubles. Margherita also includes mozzarella in brine from the same manufacturer ~ 60 rub.

Tomatoes. We always select tomatoes based on the season. Now the good ones are local. In winter - cherry tomatoes, they are more expensive. Now the cost is ~ 10 rubles

Additional ingredients. Pesto sauce, basil, oregano, additional sauce ~ 10 rub.

Pizza box. 15r

Total cost of pizza.~ 181 rub. We offer for 390 rub.

Now add to this cost delivery (courier payment + fuel), electricity costs, call center employee salary, cook salary, administrator salary, etc., and answer the question before considering alternative food delivery organizations.

HOW? HOW? WHAAAACK? PIZZA MARGARITA CAN COST 100-150 RUBLES?

Maybe: This is magic. There is some kind of spell that reduces the cost of food. Pizza is made by robots, which have already paid for themselves a long time ago and do not need to be paid a salary. In the city center, sometimes they give out premises for free, and you don’t have to pay rent. Food delivery tax has been abolished. Tesla electric car is used as transport.

Jokes aside. Broo Bro advises you to think seriously about health and proper nutrition!

The cost of pizza is 70.5 rubles

It must be taken into account that when calculating the cost of pizza in our example, 40 rubles of food costs must be taken into account for each of the 200 pizzas produced, and therefore must be multiplied. The more pizzas produced, the more material costs.

This logic does not apply to premises rent. It will always remain the same, regardless of whether we make pizza or not.

COST Products include all costs incurred in connection with the production of products or provision of services.

VARIABLE/FIXED COSTS

Variable costs will change immediately if the company produces more/less products. The amount of variable costs depends on the quantity of products produced and the degree of utilization of production capacity.

Typical examples of variable costs are the costs of purchasing raw materials, basic and auxiliary materials, electricity, etc.

Positive aspect of variable costs: if the entrepreneur does not produce the product, variable costs will disappear.

Fixed costs always remain unchanged within certain production capacities, regardless of whether the company is closed or fully loaded with work. Therefore, the amount of fixed costs does not depend on the degree of capacity utilization.

Typical examples of fixed costs: rent, leasing payments, permanent salaries, insurance premiums, etc.

Negative aspect of fixed costs is that even if the company does not produce anything - for example, because it is temporarily closed - fixed costs must be paid.

THE COMPANY SHOULD STRIVE TO REDUCE FIXED COSTS. This is especially true for young businesses. If you can't sell your goods or services, then you don't generate income, and yet you still have to pay rent and salaries to your employees.

The previously calculated cost of goods sold (for the sale of 200 pizzas) was 70.5 rubles. Let us now determine the cost of one pizza, if instead of 200 pizzas the following can be sold:

Solution:

This example illustrates well the so-called economies of scale. The more pizzas sold, the lower the cost of pizza. This is due to the distribution of fixed costs over a larger number of units of production.

The fundamental principles described above can be used in the work of any company. A company that can only sell 50 pizzas will not be competitive with a company that sells 150 pizzas. At the same time, a company that sells 150 pizzas at a price of, say, 100 rubles will receive 19.4 rubles in profit per pizza, while another company will lose 62 rubles. It is unlikely that any business will tolerate this situation for long.

The cost of production is not constant, it always depends on the situation.

Profitable Pizza Delivery Business Plan

By changing just one parameter - quantity - the value of the production cost completely changes. Very often entrepreneurs forget about this principle. They continue to relentlessly use a once-calculated cost of production, perhaps calculated several years ago. As a result, decisions made on the basis of such information turn out to be incorrect.

MARGINAL INCOME

Marginal income is the main tool for making economic decisions of the following type:

· Should I accept special order?

· Is it worth promoting this or that product in the future or is it better to abandon it completely?

· Which clients should you take care of, and who should you say goodbye to?

· Is it worth continuing to operate the unit?

Marginal income is calculated as the difference between revenue and the amount of direct or variable costs:

Marginal income is the main tool for making economic decisions of the following type:

· Should I accept special order?

· Is it worth promoting this or that product in the future or is it better to abandon it completely?

· Which clients should you take care of, and who should you say goodbye to?

· Is it worth continuing to operate the unit?

Marginal income is calculated as the difference between revenue and the amount of direct or variable costs.

If everything is more or less clear with the product component of the cost of manufactured products, then operating costs for production often seem less than they actually are.

We quickly calculate the raw material cost of our products - suppose a ball of dough costs 6 rubles, while the product brought for testing is offered to us for 15 rubles. Now we will determine which resources are occupied in our own production and calculate the indicators per ball of dough.

Work force

Depending on the production volume, the pizza preparation stages are the responsibility of one chef or distributed among different employees. Both options, as well as cases when the dough is handled by a kitchen worker who is not currently busy cutting lettuce in a cold shop, lend themselves to simple analysis.

Calculate how many man-hours it takes to prepare the dough every day. Multiply the result by the hourly wages of the employees involved in the process and divide by the average daily number of dough balls of each size produced.

If there is a situation where non-core personnel are involved, put a minus next to the number. As you know, a guarantee of quality is specialization and the presence of a clear production schedule. Chaotic processes dramatically increase the risk of quality deterioration. This risk is difficult to estimate in monetary terms.

Example: a kitchen employee is involved in the production of dough with a salary of 2 thousand rubles for a 10-hour shift. It takes him 2 hours to make 100 balls of dough. Thus, the production of one ball costs 4 rubles.

Equipment

Divide the cost of the equipment involved in producing the dough by its average service life in years (usually about five years), divided by 365 (days per year). Divide the resulting number by the daily number of pizzas produced. Multiply the total by two - this is repair, maintenance and consumed electricity.

Example: if the cost of a dough mixer is 100 thousand rubles. and production volume of 100 pizzas per day, the cost of one ball of dough increases by 1 rub. 10 kopecks

In addition, you can’t forget Be aware of the risk of equipment downtime when it breaks down, which leads to loss of orders. We put a minus next to the resulting number.

Renting premises

It would be correct to include in our calculation the rent for the square meters allocated for dough production.

Example: if the equipment occupies 5 square meters. m, then with the production of 100 pizzas per day and the rental cost of 10 thousand rubles per sq. m. m per year, the increase in price of one ball will be 1 rub. 36 kopecks If the premises cost you 30 thousand rubles per sq. m. m per year, each ball will cost 4 rubles.

On all counts

If you add up the numbers for the three items, it turns out that the final component of operating expenses per ball of dough will be from 6 to 9 rubles. Add them to the cost of the ingredients and get the cost of the ball: from 12 to 15 rubles.

Among the costs that are difficult to estimate in monetary terms, it is necessary to provide for the possible write-off of dough that was not used until the end of the shift (as a rule, this is done with a reserve to compensate for fluctuations in demand - when working with frozen balls, such losses can be avoided).

In addition, the cost must include the costs of administration and management (remuneration of a technologist, chef). Consider as many factors as possible - and it will be easy to decide whether to produce dough or purchase it.

From the editors of PMQ Pizza & Pasta:

In calculating the cost of producing your dough, in addition to the costs of raw materials, personnel, equipment and rental premises, it is worthwhile to include factors not taken into account by the author: costs of electricity, water, waste removal, and also take into accountloss and theft of products, “freezing” of money in raw materials and the cost of space for storing raw materials. Add to this the need for staff training, room cleaning (labor hands, detergents) and dailyheadache, who will make the dough and when.

Instructions

Find a room with good traffic. From technical aspects, focus on the possibility of installing a large wood-burning stove. This oven will be the “heart” of your pizzeria. Zone the room, dividing it into a hall, kitchen, utility rooms and office. Make a plan and complete specification of furniture and necessary equipment.

Invite a chef. When hiring a specialist, pay special attention to previous places of work. Ideally, your chef should be Italian - a bearer of the culinary traditions of the region, or at least live in Italy for a long time. If it is not possible to attract such a chef, look for an applicant with good experience working in similar formats in Russia. Don’t skimp on what you need to attract people – the success of your future pizzeria largely depends on the chef.

Develop recipes. As a rule, traditional types in Russian pizzerias coexist with original ones. In which direction the advantage will be (and whether it will be) is up to you to decide. Of the traditional pizzas, the menu should include such types as “Margherita” - with mozzarella and tomatoes; “Four cheeses” - with mozzarella, parmesan and two soft traditional cheeses; “Prosciutto” - with ham. You can also add white pizza, sardine pizza and vegetarian pizza to the menu. All the rest are also at your discretion. Most often, in addition to pizzas, pizzerias offer pastas and light salads.

Consider an assortment of cold and hot ones. And also make a bar sheet. The classic accompaniment to pizza is wine. But our guests drink with pleasure. The establishment's coffee list can be small: espresso, cappuccino, ristretto and Americano are quite enough. Add two or three types of tea to this list: black, green and fruit. The result is quite a decent menu for a good pizzeria.

Decorate the pizzeria hall with a predominance of classic Italian motifs, perhaps even in an ethnic manner. Do not overdo it with details, they distract from the main thing - the virtuoso skill of the pizzaiolo. He'll roll the dough until it's so thin that you can use a rolling pin to make the base for your main course—a delicious Italian pizza baked in a wood-fired oven.

note

Pizza cooked in a gas oven or even a combi oven is profanation. Without a wood stove you will not get a quality product.

Helpful advice

When choosing flour, pay attention to the time it will take to proof the dough. Flour with strong gluten requires a longer duration of this stage.

  • pizza cost

The fast food market in Ukraine continues to develop. That is why opening a pizzeria will help you, if you organize your business correctly, to make a profit in the first year.

Instructions

Assess opening opportunities in your city. If this is a fairly large settlement, then the level of competition can be high, which is not the best option for a beginner to start working. So, if possible, focus on small cities or, at least, on those areas where, even if there are competitors, you can make money. These are, first of all, station squares, markets, parks, and college campuses.

Prepare a sample menu for your pizzeria. After all, depending on what products you need, you will have to decide what equipment to purchase. So, according to sanitary rules, meat, fish, and vegetables should be stored in different refrigerators or at least refrigeration chambers. Therefore, if you are short on funds, you will have to limit yourself to only a few types of pizza for now.

Decide what kind of room you will need. Perhaps you will limit yourself to a trailer or open a small department in a shopping center. If funds allow, rent a building where you can locate a cafe, a pizza production workshop and a control room for receiving delivery orders. In any case, you will need to contact the State Sanitary and Epidemiological Service and agree on the suitability of the selected premises for the needs of the pizzeria. Draw up a new technological project, taking into account the comments of the SES, make repairs and remodeling, if necessary. The trailer must also be fully equipped and comply with sanitary standards. Get an opinion from the state fire service department.

Find suppliers of raw materials (or semi-finished products) and equipment. Even the smallest pizzeria will need a separator, a dough mixing machine, a press (or a machine for rolling out dough), a special table for collecting pizza, and an oven. In addition, if you decide to purchase raw materials rather than semi-finished products, you will need to purchase a vegetable cutter, slicer, blender, and cheese grinder.

Contact the SES again and finalize the program for organizing and conducting production control. Conclude an agreement with the laboratory to study products, dishes, water, lighting, noise, etc. Receive all certificates of conformity.

Place advertisements in newspapers and the Internet to hire personnel. Even if you plan to prepare and sell pizza yourself, you will need assistants - a cook, a salesperson (waiter), a delivery person (if you plan to do it).

Register a state of emergency and receive a certificate of inclusion of your production in the Trade Register.
